Advice on trimming laminate/veneer edges

I've built some new shelves in the kitchen from plywood and would like to apply a veneer surface followed by varnishing.

Once the veneer is stuck down, how would you go about trimming the edges? Is it worth buying a special trimmer or just use a very sharp chisel?

I have used a scalpel to reduce veneer edge to 1mm or less then finish with sand paper at 45degrees to avoid scratching surface , seems to sand down very easy and quickly.
You can buy veneered ply / mdf and just apply veneer edge.
 
Use a very sharp Stanley and make sure you go along the grain the right way to avoid the blade snagging and going downwards. It might be best to cut 1 or 2mm above the surface.

Finish with a fine grade sandpaper (120 or more) and use a block, or if you have a really sharp block plane use that on a slight angle.
