block outbuilding - damp?

Hi everyone,
We are thinking of having a garden room built and need some expert advice as you never know if you can trust the builders! A single skin block construction has been suggested "with insulation". We wonder if it'd be suitable for our purposes and what kind of pitfalls should we look out for. Very paranoid about getting mould. We want it to be usable all year round and we don't plan to stay there overnight but may have a few people spending quite a few hours there at a time, plus would like to install a shower. Should we expect the builder to somehow waterproof the blocks from the outside (or maybe inside?), as I imagine the material would absorb water from the outside / rains? Does any special care need to be taken to isolate the shower room, or any sort of wall would do (like just some basic plasterboard division)? Is it enough to just maintain a certain temperature throughout the year to keep the mould out? Are blocks a viable solution in the first place or is timber the only reliable option really? Would really appreciate some independent advice, as we're suspicious if a cheaper quote may mean some short cuts are being taken in this case
