Damp grout

We have just done our bathroom out and the walls have been tiled. The shower hasn't been used yet as still got flooring and painting to do. After a week I noticed damp spots on the grout. The bottom where the tiles join the tray hasn't been sealed with silicone yet as I've to install the glass panels yet. There were teaspoon amounts of water around the bottom edge. So thinking there must be a leak I removed the tile where the bar shower is and there is no leak but there is moisture behind the tiles. The soldered pipe joina are dry and no sign of any water around them. The walls are tanked hence the moisture appearing on the tray and not on the ceiling below. The pipes are embedded in the wall with tanking in front. I'm baffled

Might be condensation on cold tile has been humid recently.
Tray should be siliconed on install and again after tiling.
 
The tanking was painted a few mm onto the tray so the moisture must be between the tanking and the tiles. I haven't siliconed it yet as I need to install the shower screens once I've put the tile back on.
