How to restain Ikea kitchen wooden work top

Kitchen Ikea worktop was originally stained with a good mahogany wood stain stain. Over the years it became patchy and I tried to restain parts by sanding down and applying mahogany wood stain againto those parts and also Danish oil. But these attempts did not succeed. The stain did not appear to ''take'' and now the top looks worse than before.
What can I do about this problem? Would I be able to return the top to its original light colour by sanding down a lot or should I try to reapply stain again? If so how? Many thanks.

You can’t use wood stain or danish oil on kitchen worktops .

I use Fiddes Hard Wax Oil. I redo it about every 3 years. Mine is oak. Lovely finish.
