Jointing compound or mortar for mint sandstone

I am doing a patio with pure mint flags and want a light coloured (no iron stains either from normal mortar) joints filled with something strong i.e. grout or mortar?

Conflicting opinions from 2 builders: 1 says go for easy jointing compound, swept in and done in no time. The other suggests silver sand and white cement with lime to make it super strong and light coloured, but will take longer to do.

Not sure what to go for and if the jointing compound paving expert.com says the quality varies hugely so don't want a cheap one that fails soon after installing. It's got to be strong too. Any advice always appreciated.

The second option is always the better option.
first option ,a lazy builder would use as a rule and diy.
If you make the mix so its quite damp ,then press it in firm.
You dont want it wet like brick laying mortar as you will make a mess.

Have a practice and see how you get on, the damper the better but you must avoid a sloppy mix.

late update, but thanks for the advice. Opted for plasterers sand on advise from landscaper (in between builders and sharp for grittiness but whiter) with white cement and a little plasticiser. Was time consuming, but glad I did it as it's rock solid and looks off white like the pavers. Also kept a couple of slightly moving slabs tight and solid.
