Plastering over a wall cavity

While stripping the old kitchen out I found the door reveal for what used to be the door to the garden had a lot of blown plaster and some black mould at the bottom. Removing all of this has exposed the wall cavity, which obviously was not sealed when the door was put in long ago.

What is the best course of action so that it can be plastered over? There isn't space to fit a wall cavity closer without removing the entire doorframe and starting from scratch. The visible "hole" is 2-3 inches wide at the bottom, but closer to 1-2 inches for the majority of the reveal. Would closed cell insulation foam do just to prevent cold bridging and damp ingress (and something to actually stick plaster to).
