Re plastering a 1930s house

Hi all, wondering what my options are here.

I have a 1930s semi and all the plaster is shot. It's lime plaster on to lime mortar brickwork.
I'm taking down the partition lath walls and replacing with plasterboard and multifinish.

What would I need for the brick walls? Am I ok with sand cement scratch coat and multi over the top or would I be better batten and boarding, or will it need to be lime plaster going back over the top?

I'll be doing the whole house, only damp issues I had were downstairs by a bay window where the cavity was filled with sand and soil bridging the dpc.

I did think about this, wouldn't this lead to the walls sweating?
Or can I batten off and add insulation behind the boards?
