Skimming over old plaster

We have cut holes on the ceiling to access pipes and electrical wires. We have filled with new plaster board, with a view to over skimming the whole ceiling. What is the best approach just over skim in 2 coats or skim over the plasterboard patches to thicken out as they are 3-5mm shy of the ceiling, then two coats. Enthusiastic DIYer.
Also should i paint the ceiling with like a grit coat first, i have tried PVA before and not had avlot success, its dry before you start?

it’s 2 coats whatever if you decide to skim .
if it’s fresh plaster id seal the dust with a weak pva. (really weak). then blue grit and skim. i wouldnt use pva on a ceiling to skim to.
you can use the grit on a brush in your patched areas to fill them out slightly.
 
As some areas patched are around 2ft square, would it be easier to fill in with multi to the original ceiling level, then blue grit all over and 2 coat skim. Sorry noob plasterer.
 
yes it would give you a better result.
re-tape all the joints again if you know where they are and all the bits you patched in.
