Stud out chimney opening

Morning all,

Just looking for some advice on how to make good the inside of this chimney.
I was hoping to just dot & dab the inside of the firebox but it the "builder" has left a bit of an awkward gap to square up so I need to stud it. (unless anyone has any other ideas).

Basically just build a goal post type frame and fix to the walls where I can.

Question is - Can this be done with timber and fireproof plasterboard or does it need to be metal studwork around the range cooker? (gas hob electric oven).

Or should I try and re-build the sides brickwork to the right height?

I think that's going to be a bit of a pain in MF as you don't appear to have much by way of flat surfaces in there (can't see the floor, but suspect similar). I'd prefer to do it in timber with pink boards, myself, which should be a fairly quick job
