Does anyone know the name of this pin that is sprung, so when you pull the little notch back, it retracts the pin, leaving you to move the shelf up and down.

I’m looking to buy a similar shelf with the same mechanism so I can rearrange my kitchen cupboards thank you

You could just use conventional pin shelf supports.?

Thanks if I did that how would I get the shelves out again? With ones pictured I can retract the pin to move it up and down

There's a chance it's a variety of library clip.

Custom width? Just pop to B&Q and if they don't have one the right width get them to cut it down at their cutting desk (check whichever B&Q you visit has a cutting facility).

You can get anything online of course but it may be quite costly compared to the likes (and simplicity) of B&Q. You might have a local timber mill locally who can cut to suit. But generally kitchen shelves are all standard sizes anyway.
