Chips on New Kitchen installed

it's upsetting how these people can get away with something like this. Did you report them to the Trading Standards Authority?

Why on earth did he use white silicone when both the worktop and sink are grey?

A fiver says he didn't silicone the back of the sink.

Why would he?
He's there to make money, not to do a good job by the look of it.
So a line of silicone means £50p more in his pocket.

why don't you take him to court hopefully, you'll get some of your money back? it's worth the try

Given the crappy workmanship, Small Claims might well be worth a go to recover cost of materials he's wrecked and the money he's charged you to do it. Only costs about £60 and a few hours, at worst it'll irritate the fitter, at best you'll get a judgement against him (available for anyone else to see).
Don't wait for legal process before getting it done properly though, keep all photos, emails, text conversations, invoices, make dated notes of conversations (as best you can recall, resist the temptation to embellish).
Good luck
