Without some pics its difficult to visualise. Im guessing you have a section of loft at the eves which needs insulating at joist level as that is lije a convrntional loft.
And then you have dwarf stud walls which form a tringular loft void either side of the house.
The central bit is the conversion, which needs insulating at rafter level.
If thats the case you are aiming to achieve a continuous insulated envelope comprising, joists, stud walls and pitched rafters.
