Soldering - where am I going wrong?

heat up the joint (smallest flame I can get)
It's not the flame size that matters, it's how long it is applied for.
A large roaring flame applied for a few seconds is far preferable to a tiny feeble one put there for several minutes.

It's like removing a bra for the first time... With one hand! It comes with practice and the results are very satisfying

CLEANLINESS is the key. Don't rely on flux to clean up oxidized copper. Get some wire wool on it first, then flux follows that. The same applies to soldering electronics stuff too, if ever you should try that. If leads and tracks are oxidized, it no-go.
